Tilapia
with corn salsa
INGREDIENTS
4 tilapia fillets
2 T flour
1 T olive oil
¼ t salt
¼ t pepper
15 oz black beans, rinsed and drained
11 oz corn, drained
¼ C oil
2 T balsamic vinegar or lemon juice
2 T green onion, chopped
2 T pepper, chopped
PREPARATION
Dry fish and drench with flour.
Heat olive oil at medium heat and place fillets in skillet.
Cook for 2 min per side.
Combine the remaining ingredients in sauce pan, warm gently.
Serve with the fish.
