Watercress Cream Sauce

with white wine

INGREDIENTS
  • 1 T Butter
  • 2 shallots, chopped
  • ½ C white wine
  • ½ C cream
  • Bunch of watercress, chopped
PREPARATION
  1. Melt 1 T butter, add 2 shallots-chopped, cook about 3 min until soft.
  2. Add ½ C white wine and ½ C cream, bunch of watercress (about 1 C), chopped and reduce to half.
  3. Puree in blender and return to pan and reheat.
