Black Bean & Lentil Salad

INGREDIENTS
  • 2 cans (14 oz) lentils, drained
  • 2 cans (14 oz) black beans, drained
  • ½ C onion, chopped
  • 1 jalapeño, chopped
  • ½ C sun dried tomatoes in oil, chopped
  • 1 pint grape tomatoes, halved
  • ¼ C dill, chopped
  • ¼ C basil, chopped
  • ¼ C parsley, chopped
  • 1 lemon, juiced
  • ¼ C olive oil
  • 2 garlic cloves, minced
  • 1 T balsamic vinegar
  • Salt and pepper to taste (~1/2 t each)
  • Feta cheese (optional)-omit for vegan
PREPARATION
  1. Mix first 9 ingredients in a bowl.
  2. Whisk together lemon juice, olive oil, garlic, vinegar, salt and pepper.
  3. Drizzle the dressing over the salad and stir.
  4. Refrigerate overnight to meld flavors.
  5. Add optional feta cheese when serving.
