Haloumi, Grape and Cucumber Salad
INGREDIENTS
Toasted almond slivers
Haloumi cheese, sliced
1 cucumber, chopped
1 C grapes, halved
Arugula
Mint, chopped
2 T lemon juice
4 T olive oil
2 T honey
Salt and pepper
PREPARATION
Toast almond slivers-8 min, 350°F.
Fry Haloumi cheese slices on both sides at low temperature until light brown, cool and chop.
Combine cucumber, chopped haloumi, grapes and mint with arugula in a salad bowl.
Add lemon juice, honey and olive oil, season with salt and pepper.
Toss, sprinkle with toasted almonds and serve.
