Haloumi, Grape and Cucumber Salad

INGREDIENTS
  • Toasted almond slivers
  • Haloumi cheese, sliced
  • 1 cucumber, chopped
  • 1 C grapes, halved
  • Arugula
  • Mint, chopped
  • 2 T lemon juice
  • 4 T olive oil
  • 2 T honey
  • Salt and pepper
PREPARATION
  1. Toast almond slivers-8 min, 350°F.
  2. Fry Haloumi cheese slices on both sides at low temperature until light brown, cool and chop.
  3. Combine cucumber, chopped haloumi, grapes and mint with arugula in a salad bowl.
  4. Add lemon juice, honey and olive oil, season with salt and pepper.
  5. Toss, sprinkle with toasted almonds and serve.
