Spinach Tabouleh

INGREDIENTS
  • water
  • 1 C bulgur
  • 2 C tomatoes, grated
  • 1 T tomato paste
  • ½ t allspice
  • 1 lemon, juiced
  • 1 t salt
  • ½ t pepper
  • ½ C olive oil
  • 2 peppers, chopped
  • 8 C spinach, chopped
  • 1 bunch mint, chopped
PREPARATION
  1. Boil water
  2. Place bulgur in bowl and add ½ C boiling water. Swell for 10 min.
  3. Whisk together grated tomato, tomato paste, allspice, lemon juice, salt, pepper and olive oil.
  4. Combine with peppers and bulgur.
  5. Add spinach and mint and check seasoning*.

* Saves well refrigerated for up to 3 days
