Fruit Cheesecake Cupcakes

INGREDIENTS

• 8 oz. cream cheese
• 2 t vanilla extract
• ½ lemon, juiced
• ½ C sweetener
• 2 eggs
• ½ C fruit (blueberries, cherries, etc)
• 6 cupcake liners

PREPARATION

1. Preheat oven to 375° F
2. Mix the cream cheese, vanilla, lemon juice and sweetener until smooth. Begin with all ingredients at room temperature.
3. Add 1^st egg and beat until smooth
4. Add 2^nd egg and repeat, fold in fruit
5. Place cupcake liners in cupcake pan. Gently spoon the mixture into liners.
6. Bake 30-40 min, until set. Enjoy.
