Mushroom Ragout
INGREDIENTS
¼ C olive oil
1 onion, chopped
4 garlic cloves, minced
1 lb mushrooms (mixture cremini, oyster, shiitake, etc.)
Salt and pepper
½ C Marsala, Port or Sherry
2 C mushroom or vegetable stock
½ C cream
¼ C basil, chopped
½ C parsley, chopped
1 C Parmesan cheese, grated
PREPARATION
Heat oil in a large skillet over medium high heat.
Add onions and garlic and cook until soft-8 min.
Add mushrooms and season with salt and pepper. Cook until moisture evaporates.
Add wine and cook until wine evaporates, about 3 min.
Add stock and reduce by half for 30 min.
Add cream, herbs and Parmesan cheese and mix well.
