Tuscan Stew
INGREDIENTS
4 slices bacon chopped
1 onion – diced
6 cloves garlic minced
4 links sweet Italian sausage, sliced
1 pt grape tomatoes, halved
1 C wine
1 C cauliflower florets
3 C stock
6 oz fresh pasta or ravioli
2 t pepper (Maras or Aleppo)
1 C cream
1 bunch watercress, chopped
1 bunch basil, chopped
PREPARATION
Cook bacon 2 min on medium/high
Add onion , cook until soft
Add garlic, stir well
Add sausage, cook 5 min
Add tomatoes and cook until thick & soupy, 5 min
Add wine and cook until it evaporates
Add stock and cauliflower florets, simmer 8 min
Add watercress, basil and pasta. Simmer 5 min
Add cream, taste and adjust seasoning
Serve
