Tuscan Stew

INGREDIENTS
  • 4 slices bacon chopped 
  • 1 onion – diced
  • 6 cloves garlic minced
  • 4 links sweet Italian sausage, sliced
  • 1 pt grape tomatoes, halved
  • 1 C wine
  • 1 C cauliflower florets
  • 3 C stock
  • 6 oz fresh pasta or ravioli
  • 2 t pepper (Maras or Aleppo) 
  • 1 C cream
  • 1 bunch watercress, chopped
  • 1 bunch basil, chopped
PREPARATION
  1. Cook bacon 2 min on medium/high
  2. Add onion , cook until soft
  3. Add garlic, stir well
  4. Add sausage, cook 5 min
  5. Add tomatoes and cook until thick & soupy, 5 min
  6. Add wine and cook until it evaporates
  7. Add stock and cauliflower florets, simmer 8 min
  8. Add watercress, basil and pasta. Simmer 5 min
  9. Add cream, taste and adjust seasoning
  10. Serve
