Clams
In White Wine
INGREDIENTS
2 T olive oil
4 garlic cloves -sliced
2½ lbs Clams
1 C white wine
Pepper
Salt
2 T chopped cilantro
1 T lemon juice
PREPARATION
Heat oil in sauce pan with tight fitting lid.
Sauté garlic in hot oil 1 min.
Add clams, wine, pepper, salt.
Cover and cook until clams open (about 5-10 min).
Add lemon juice and cilantro.
Strain sauce.
Serve clams with sauce for dipping.
