Mushroom Ragout

INGREDIENTS
  • ¼ C olive oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 lb mushrooms (mixture cremini, oyster, shiitake, etc.)
  • Salt and pepper
  • ½ C Marsala, Port or Sherry
  • 2 C mushroom or vegetable stock
  • ½ C cream
  • ¼ C basil, chopped
  • ½ C parsley, chopped
  • 1 C Parmesan cheese, grated
PREPARATION
  1. Heat oil in a large skillet over medium high heat.
  2. Add onions and garlic and cook until soft-8 min.
  3. Add mushrooms and season with salt and pepper. Cook until moisture evaporates.
  4. Add wine and cook until wine evaporates, about 3 min.
  5. Add stock and reduce by half for 30 min.
  6. Add cream, herbs and Parmesan cheese and mix well.
