Swordfish

with Herb butter

INGREDIENTS
  • 4 swordfish steaks
  • 4 T butter
  • 1 lemon, juiced
  • ¼ C chopped fresh herbs (dill, thyme, oregano or rosemary)
  • Salt, pepper
PREPARATION
  1. Preheat oven to 250 °F
  2. Dry swordfish
  3. Melt butter over medium-high heat.
  4. When butter foams, add steaks and brown for 2 min per side.
  5. Remove to serving dish, place temperature probe in thickest section and place in oven until probe temperature reaches 140 °F.
  6. Mix lemon juice, herbs, salt and pepper with butter in skillet for about 2 min.
  7. Spoon over steaks and serve.
