Swordfish
with Herb butter
INGREDIENTS
4 swordfish steaks
4 T butter
1 lemon, juiced
¼ C chopped fresh herbs (dill, thyme, oregano or rosemary)
Salt, pepper
PREPARATION
Preheat oven to 250 °F
Dry swordfish
Melt butter over medium-high heat.
When butter foams, add steaks and brown for 2 min per side.
Remove to serving dish, place temperature probe in thickest section and place in oven until probe temperature reaches 140 °F.
Mix lemon juice, herbs, salt and pepper with butter in skillet for about 2 min.
Spoon over steaks and serve.
