Spinach Soufflé

with white sauce

INGREDIENTS
  • 1 onion, chopped
  • 1 T butter
  • 3 egg yolks
  • 1 C spinach, chopped, cooked, drained
  • ½ C Parmesan cheese, grated
  • White Sauce
  • 2 T butter
  • 2 T flour
  • 1 C cream
  • Salt and pepper
PREPARATION
  1. Preheat oven to 350°F.
  2. Sauté onion in butter in skillet, set aside.
  3. White sauce: melt butter, stir in flour and heat until bubbly in oven-safe sauce pan. Gradually add cream stirring constantly until thick, 1-2 min.
  4. Beat egg yolks until thick and lemon colored.
  5. Stir into hot white sauce with spinach, cheese and onions. Add salt and pepper
  6. Set pan in water bath and bake 50 min.
