Carrot Soup

INGREDIENTS
  • 1 T olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 lbs carrots, peeled and sliced
  • 2 C stock
  • 2 C water
  • 1 t salt
  • Basil, cilantro or mint (optional)
  • ¼ C peanut butter
  • 1 T chili garlic sauce
  • 1 C crème fraiche or sour cream
PREPARATION
  1. Heat oil in large pot over medium heat.
  2. Add onion and garlic and cook until soft.
  3. Add carrots and cook for 5 min.
  4. Add stock, water and salt and bring to a boil, cover and simmer and 20 min.
  5. Puree in a blender.
  6. Add herbs, peanut butter and chili garlic sauce to blender and combine.
  7. Mix in crème fraiche and rewarm.
  8. Freeze leftovers.
