Stroganoff Sauce

INGREDIENTS
  • 3 T butter
  • 1 onion, chopped
  • 1+ C mushrooms, sliced
  • 2 T flour
  • 1 C stock
  • 1 T Dijon mustard
  • 1 C crème fraîche
PREPARATION
  1. Melt butter in pan used to sear meat and sauté onions until soft.
  2. Add mushrooms and cook until golden.
  3. Add flour, cook, stirring vigorously until well mixed.
  4. Slowly add stock with constant stirring.
  5. Add mustard and crème fraîche, stir.
  6. Simmer until thickened, about 5 min.
